Maó cheese is found in some parts of Spain. The milk of Frieian cows is being used while producing the cheese, because the milk of these cows is available in large content in Spain. The old method of preparing this cheese is like, at first milk is curled using herbs, then the curled milk is wrapped in very fine white coloured cloth and then it is molded by hands until it becomes compact. then the cheese is kept in the caves for maturing. The maturing period is between one to two months. The flavour goes somewhat acidic, and the colour is creamy.
