Milbenkäse cheese is also known as Mite cheese, produced exclusively in the village of Wurchwitz, in the state of Saxony-Anhalt. Quark (a fresh cheese) is salted, mixed with caraway, then made into small balls or cylinders and dried. Then it is placed into a wooden box inhabited by cheese mites for three months. Once ripened the rind becomes reddish-brown. Some producers aged it upto one year, as a result the rind turns black. Milbenkäse has a strong aroma. Mites clinging to the cheese rind are also consumed. Milbenkäse is not strictly legal, as the sale of foodstuffs containing living animals is forbidden in Germany; however it is tolerated by the authorities for the sake of its ancient tradition.
