Made from raw sheep's milk, Mondegueiro is a delightful herbaceous cheese produced in the north-central part of Portugal. Being a small version of the Serra da Estrella, Mondegueiro is manufactured by the same cheese maker with the milk from same herd of sheep. The paste is soft, sticky and mild. When aged, the texture of the cheese gets more harder. This cheese will please the palate of cheese lovers with hearty bread or well worth trying with red wines such as Pinot Noir, Tempranillo or Syrah.
