Persillé de Tinges
Hand crafted cheese produced in a Pyrenees (Savoie/Rhone-Alps) region of France. Made from goat's milk, Persillé de Tinges is a semi-hard and uncooked cheese. Persillé means spotted and as the name suggests, this farmhouse cheese has a spotted colouring. The affinage period lasts for 6 months. It has a lovely tall cylindrical form with crumbling rind. When it matures, the rind becomes more crumbly and brown. This rustic quality farm cheese has a salty flavour with a hint of citrus i.e. lemon taste. The cheese tastes delicious with a glass of Beaujolais, Mondeuse, Chenin Blanc or Chinon wine.
