Production of cheese is allowable in the town of Chania only, which is situated in the island of Crete. Since 1996 it is a DOC cheese and manufacture is safeguarded since 1988. This purely white colour cheese is produced from non-pasteurised sheep's milk or a mixture of sheep's and goat's milk. Soft in texture this cheese is without holes and outer skin. Fats contain in the cheese is around 50%.
