Produced in Quebec province of Canada, Pont Couvert is a cow's milk cheese. This washed-rind cheese offers smooth paste and some similarities with the cheeses from Vacherin family cheeses. It suggests the superb taste of cheeses made in Normandy. At Artisanal Center, Pont Couvert cheese is washed in dry cider and allowed it to mature. The process of maturation continues until the cheese becomes creamy with the flavours and aromas of apple. This cheese is Semi-hard in texture and well worth trying with Riesling.
