This cheese is manufactured at Poulcoin farm in the beautiful landscape of Burren. The rind of this cheese is thin and natural. It’s a firm cheese but not overtly dry. Poulcoin is cheese made from goat’s milk. It’s a matured organic cheese and has intense, earthy flavours. With a hard texture, it has a milky, floral goats gouda that can get intense as the cheese ages. The flavour is smooth, with a slight trace of herbs. It has a robust, oaky flavour while retaining the floral taste. Its taste is similar to Pecorino or Parmesan. The cheese matures very well. It’s a vegetarian cheese.
