Manufactured in Graubunden region in northeast Switzerland, Prattigauer is a Alpage-style cheese and it is aged by master affineur Rolf Beeler in Zurich. Made from raw cow's milk, it has a washed-rind and consistency similar to Appenzeller. It is aged for minimum of seven months and a hint of smokiness of this cheese is derived by using wood fires during the pressing process. It offers a firm paste and an intensely strong and rich nutty flavour. Its long-lasting robust flavour is wonderful with Rieslings, Merlot, Muscat or Gewurztraminer.
