Queijo de Nisa
Queijo de Nisa cheese comes from the Alentejo, largest region of Portugal. It is semi-hard, with earthy flavour and little sour, acidic in taste. It’s paste is yellowish in colour with small eyes on it. It is made from the Merino sheep’s milk, which is curd to change from liquid to semi. Salt is added on to the paste, which is shaped in disc form. Cheese and wines of Alentejan region combination is very famous. It is normally produced in November, March and April. It can be served as its own or with fresh, crusty bread. It is versatile with both red and white wines. Also it can be paired with fresh, Verde wines or jammy, and fruity reds.
