Queso Azul Asturiano
Produced in the village Illas in northern Spain, Queso Azul Asturiano is a Spanish semi-blue cheese. Also known as La Peral, it has semi-soft consistency. This rare and delightful mixed milk cheese is produced from the blend of pasteurised cow's milk and sheep's milk cream. It is then left in Asturian caves for aging process of 60 days. When aged, it offers a strong olive flavour, pungent taste and distinct creamier texture in the finish. This rind less and briny flavoured cheese can be consumed with Viognier, Port or any of Spanish dessert wines.
