Raclette Fritz (Quebec)
Raclette Fritz is a semi-soft cheese with a washed skin and ripened shell. Comes with lactic odour and hazelnutty flavour with a tinge of mushroom. Made from pasteurised cow’s milk. Matures within a period of 2 months. Once opened should be consumed within 60 days. Should be preserved in a doubled waxed paper of an aluminium foil between 2 and 4 ºC. Requires around 48% humidity during production. Contains around 24% fat. Appreciated with salads and soups. Generally melted on a croûton, potatoes and bacon. Grated on pizzas and in the dishes of pastes. Also eaten with bechamel sauces.
