Traditional, creamy, unpasteurised cheese made from a Merino sheep milk. Serpa is most famous cheese in the Alentejo region of Portugal. During aging process, rind is rubbed with olive oil. Its aging period is about 6 months. It has yellow coloured rind and its buttery interior has few irregular holes. Serpa is slightly sweet in flavour with grassy, herbal aroma. This cheese is served before meal.
