Sirenje or Sirene is a type of white brine cheese made in Bulgaria and Macedonia. It is popular, not only in these two countries, but also in the neighboring countries. Usually made from cow’s milk, sheep’s milk or a combination of both, its crumbly in texture with a fat content of 40-45 %. With a grainy texture, it is used both as table cheese and in baking. Original made from goat’s milk, today it is mostly made from cow’s milk. It takes minimum of 3 months to ripen/age. Manufactured in blocks of cheese
