Tarago River Blue Orchid
Tarago River Blue Orchid is a blue cheese made from cow’s milk. White turning slightly yellow containing blue veins in the traditional pattern. Contains Roqueforti cultures that grow, thus helping the Blue Orchid to develop an intense blue vein and robust traditional flavour. Has an outstanding astringency, bitterness and acidity when young. Aged for 8 weeks and if it is allowed to mature further for 2-4 weeks then it develops a strong flavour, that is enjoyed sensationally along with fresh figs with a prosciutto wrap. Served with a sweet wine that matches with its salty and tangy nature.
