Tarago River Shadows of Blue
Tarago River Shadows of Blue is doubly creamed, cow’s milk cheese. Dense with a soft texture and a mild flavour. On maturity develops into an intense smooth light blue vein that is appreciated wonderfully by the Brie cheese lovers. Comes with a distinct yellow wax (non-edible) that helps in holding its savour during maturation. Its mould is made up of Roqueforti culture, which helps in producing a dense, chalky cheese. Aged for 8-10 weeks. Enjoyed with dried fruit, fig and walnut bread. Appreciated with light sweet wine that matches the creamy saltiness of Shadows of blue!
