Manufactured by few farmers in the department Alpes-de-Haute-Provence in France, Thym Tamarre is goat milk type cheese. It is an original and typical cheese which can be easily classified by its shape and the elegant touch of a branch of thyme folded within. The milk for this cheese is derived from the goats which are fed on wild pasture of herbs such as thyme, rosemary and more. It takes 1 to 7 weeks period to affinage. The rind is soft and it offers the white paste. This semi-firm textured cheese tastes delicious with a glass of Viognier or Bandol blanc wine.
