A beautiful dark brown (going towards orange) cheese, Timanoix is made from cow’s milk. A semi-soft cheese with a crust washed with a mixture of walnut brandy and brine. Has a smooth rind with small yellow, white dots and a magnificent golden yellow core. Comes with unique nutty flavour and a smoky or coffee like finish. Made from cow’s milk. Usually matures early because of its juicy nature and compact shape. Appreciated with full-bodied ale, Cabernet Franc, Tia Maria liqueur or Sherry on the cheese palate. Timanoix is worth trying with walnut liqueur.
