Tomme au Marc de Raisin
Tomme au Marc de Raisin is a smooth cheese with an excellent grey shell. A large round shaped cheese with mild flavour, which is attained after ripening it for 3-4 months in a thick blanket of grape marc (residue that's left after pressing the fruit to make wine). After maturation a deep sharp savour is obtained which enhances the earthy flavours thereby giving a slight tang. Generally produced in the winter season from raw cow’s milk. A combination of Tomme au Marc de Raisin and a light red or fruity red or fruity dry white wine rocks the cheese parties. Can also be enjoyed with Mondeuse, Pupillin, and Buvilly.
