Tortita de Barros
Tortita de Barros is a rare cheese. Made from sheep's milk, it is produced in arid country of Extremadura in Spain. When young, it offers creamy and nutty flavour and run over the surface. After the coagulation with the help of the Cardoon Thistle and after the maturation period, it becomes more intense, soft and rich flavoured. This cheese was awarded silver medal at the 2005 World Cheese Awards. It can be nicely paired with Tempranillo or other Spanish and Portuguese varietals.
