Trappiste d'Echourgnac or Echourgnac is a pressed, unheated cheese manufactured by the Nuns of the Notre Dame de Bonne Espérance (Our Lady of Good Hope) in the l'Abbaye d'Echourgnac in the northern part of the Aquitaine région of France. Echourgnac comes in the shape of a small curved disc with a yellow-grey crust washed with Walnut Liqueur. Contains a fine ivory core with very small holes. Made from cow’s milk, contains 40% fat. Usually enjoyed with any kind of fruity red wine. A dry light white helps in retaining its tang.
