Produced in Pas-de-Calais department around the town of Boulogne-sur-Mer in France, Vieux-Boulogne is an unpasteurised and unpressed cheese. Made from cow's milk, it has a square shape with red-orange rind. The rind is washed with beer during the manufacturing process. It takes to 7 weeks to affiange and contains 45% fat. The cheese offers a sharp pungent taste and the central paste is soft and elastic. Also known as Sablé du Boulonnais, this pre-salted cheese goes good with glass of Pinot Noir or Beajolais Cru.
