Vintage Irish cheddar
Vintage Irish cheddar cheese is made from cow milk and is of semi hard texture. It’s crumbly and has a sharp and strong taste. The main rennet in this cheese is an enzyme. The cheese is matured for a minimum of 12 to 18 months. The cheese that passes the grading processes during the aging period gets the ‘Vintage’ tag. Such detail to the cheesing process results in a rich, rounded flavour with a firm smooth body. This cheese can be melted with vegetables, grated on a salad or sliced over a sandwich.
