Walder, a semi soft and fresh cheese originally comes from Austria. Cheese is a very important and prestigious product of the Alma Cheese making Company of Vorarlberg, Austria. It is made from natural alpine raw-milk or unpasteurised cow's milk, which is from the few dairies at the Bregenzerwald. It is as similar as Appenzeller or as a creamy, spicy Gruyere. Before sold in the market, it is ripened for at least 140 days. It is a dotted with pea-sized holes. It has mild but slightly spicy flavoured with cherry-fruity smell.
