Saint Paulin
Originally made by Trappist monks, Saint Paulin is a semi-soft, washed-rind cheese made from pasteurized cow's milk. It is similar to Havarti and Esrom and has a creamy, firm texture. The cheese ripens completely in 4-5 weeks and develops yellow-orange colour rind. The cheese can be served with fruits and light wines.
