Amarelo de Beira Baixa
Amarelo comes from the Beira Baixa region of Portugal. It is made from unpasteurised, raw sheep and goat milk. It has a distinctive aroma, sharp but pleasant taste, and buttery tangy flavour. Its flavour is rustic and strong, like Portugal’s sea salt. Its texture goes from medium-soft and slightly gooey to semi-hard. It tastes great with Pinot Noir or red wines.
