Chicken Parmesan Recipe

Whip up a heartwarming Chicken Parmesan dinner for two, in no time at all. With a quick 15-minute prep and a 25-minute bake, you'll be serving up tender chicken, rich marinara, and oozy mozzarella and Parmesan.

If you're in a hurry, store-bought marinara works great. But if you have some spare time and fancy a homemade touch, just add 10 more minutes to your prep and an extra 30 minutes of cooking. Your homemade sauce can be made ahead and stashed in the fridge, ready for the next Italian feast.

INGREDIENTS

  • 2 boneless, skinless chicken breasts (about 400g)
  • 1 cup breadcrumbs (120g)
  • 1/2 cup grated Parmesan cheese (50g)
  • 1 cup marinara sauce (240g) 
  • 1 cup shredded mozzarella cheese (120g)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish

For the homemade marinara sauce:

  • 400g canned crushed tomatoes
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon pepper flakes
  • Salt and pepper to taste

How to prepare

  1. Preheat the oven to 200°C (400°F).
  2. Combine breadcrumbs, parmesan cheese, dried oregano, salt, and black pepper in a bowl.
  3. Coat each chicken breast with the breadcrumb mixture, pressing gently to adhere.
  4. Heat olive oil in an oven-safe skillet over medium-high heat.
  5. Brown chicken for 3-4 minutes on each side.
  6. Spoon marinara sauce (*) over each chicken breast, and top with mozzarella.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked.
  8. Garnish with fresh basil before serving.

(*) Home-made marinara sauce:

  1. Heat olive oil in a saucepan over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Pour in crushed tomatoes and stir well.
  4. Add dried oregano, dried basil, pepper flakes, salt, and pepper. Stir to combine.
  5. Bring the sauce to a simmer, then reduce the heat to low.
  6. Let the sauce simmer for 20-25 minutes, stirring occasionally, until it thickens.
  7. Taste and adjust seasoning if needed.
  8. Tip: For a smoother sauce, you can blend the mixture using an immersion blender before serving.

Chicken Parmesan is typically served atop spaghetti, but it also shines as the star of the dish alongside vegetables like green beans or sautéed spinach.
