Savour the classic comfort of Chicken Parmesan with this easy recipe designed for two. With just 15 minutes of prep and 25 minutes of baking time, this dish combines tender chicken cutlets, rich marinara sauce, and melted mozzarella and Parmesan for a delicious Italian-inspired dinner. You can use any commercial marinara sauce but if you prefer a homemade marinara, you should add 10 minutes for prep + 30 to cook time. You can prepare the sauce in advance and keep it in an airtight container in the fridge or freeze it for longer storage.

Method
- Preheat the oven to 200°C (400°F).
- Combine breadcrumbs, parmesan cheese, dried oregano, salt, and black pepper in a bowl.
- Coat each chicken breast with the breadcrumb mixture, pressing gently to adhere.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Brown chicken for 3-4 minutes on each side.
- Spoon marinara sauce (*) over each chicken breast, and top with mozzarella.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked.
- Garnish with fresh basil before serving.
- (*) Home-made marinara sauce:
- Heat olive oil in a saucepan over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Pour in crushed tomatoes and stir well.
- Add dried oregano, dried basil, pepper flakes, salt, and pepper. Stir to combine.
- Bring the sauce to a simmer, then reduce the heat to low.
- Let the sauce simmer for 20-25 minutes, stirring occasionally, until it thickens.
- Taste and adjust seasoning if needed.
- (For a smoother sauce, you can blend the mixture using an immersion blender before serving).
