Ingredients

2 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
100g Provolone cheese
120ml chicken broth
2 garlic cloves, minced
fresh parsley for garnish (optional)
Salt and pepper, to taste

Method

  1. Preheat the oven to 200°C (400°F).
  2. Season chicken breasts with salt, pepper, oregano, and thyme.
  3. In an oven-safe skillet, heat olive oil over medium-high heat.
  4. Sear the chicken breasts for 2-3 minutes on each side until golden brown.
  5. Remove chicken from the skillet and set aside.
  6. In the same skillet, add minced garlic and cook for 1 minute.
  7. Pour in chicken broth, scraping the bottom to deglaze.
  8. Return the chicken to the skillet, and top each breast with provolone cheese slices.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through and the cheese is melted and bubbly.
  10. Garnish with fresh parsley before serving.
