Ingredients
2 large eggplants (about 800g), sliced into 1 cm rounds | |
2 cups marinara sauce | |
2 cups shredded mozzarella cheese | |
1 cup grated Parmesan cheese | |
1 cup all-purpose flour | |
3 large eggs, beaten | |
2 cups breadcrumbs | |
1 teaspoon dried oregano | |
1 teaspoon dried basil | |
Salt and pepper, to taste | |
Fresh basil leaves, for garnish |
Method
- Preheat the oven to 190°C (375°F).
- In three separate bowls, place flour in one, beaten eggs in another, and breadcrumbs mixed with dried oregano, dried basil, salt, and pepper in the third.
- Dredge each eggplant slice in flour, dip in beaten eggs, then coat with breadcrumb mixture, ensuring even coverage.
- Arrange the coated eggplant slices on a baking sheet and bake for 15-20 minutes until golden brown and crisp.
- In a baking dish, spread a thin layer of marinara sauce, followed by a layer of baked eggplant slices. Repeat the process, finishing with a layer of marinara on top.
- Sprinkle shredded mozzarella and grated Parmesan over the top layer.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
- Allow it to cool for a few minutes, garnish with fresh basil, and serve warm.
