Ingredients

2 large eggplants (about 800g), sliced into 1 cm rounds
2 cups marinara sauce
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
1 cup all-purpose flour
3 large eggs, beaten
2 cups breadcrumbs
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper, to taste
Fresh basil leaves, for garnish

Method

  1. Preheat the oven to 190°C (375°F).
  2. In three separate bowls, place flour in one, beaten eggs in another, and breadcrumbs mixed with dried oregano, dried basil, salt, and pepper in the third.
  3. Dredge each eggplant slice in flour, dip in beaten eggs, then coat with breadcrumb mixture, ensuring even coverage.
  4. Arrange the coated eggplant slices on a baking sheet and bake for 15-20 minutes until golden brown and crisp.
  5. In a baking dish, spread a thin layer of marinara sauce, followed by a layer of baked eggplant slices. Repeat the process, finishing with a layer of marinara on top.
  6. Sprinkle shredded mozzarella and grated Parmesan over the top layer.
  7. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  8. Allow it to cool for a few minutes, garnish with fresh basil, and serve warm.
