Ingredients

500g pasta of your choice
200g Feta cheese, crumbled
1 cup cherry tomatoes, halved
1⁄2 cup sun-dried tomatoes, chopped
3 tablespoons olive oil
4 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and peper, to taste
Fresh basil leaves, for garnish

Method

  1. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a large pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Add cherry tomatoes and sun-dried tomatoes to the pan, cooking for an additional 3-4 minutes until the tomatoes soften.
  4. Lower the heat, crumble Feta cheese into the pan, and stir until the cheese starts to melt.
  5. Pour in the reserved pasta water to create a creamy sauce. Season with dried oregano, dried basil, salt, and black pepper. Stir to combine.
  6. Add the cooked pasta to the pan, tossing until well coated in the flavorful Feta cheese sauce.
  7. Adjust seasoning if needed and cook for an additional 2-3 minutes to allow the flavours to meld.
  8. Serve hot, garnished with fresh basil leaves.
