Ingredients
500g pasta of your choice | |
200g Feta cheese, crumbled | |
1 cup cherry tomatoes, halved | |
1⁄2 cup sun-dried tomatoes, chopped | |
3 tablespoons olive oil | |
4 garlic cloves, minced | |
1 teaspoon dried oregano | |
1 teaspoon dried basil | |
Salt and peper, to taste | |
Fresh basil leaves, for garnish |
Method
- Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a large pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
- Add cherry tomatoes and sun-dried tomatoes to the pan, cooking for an additional 3-4 minutes until the tomatoes soften.
- Lower the heat, crumble Feta cheese into the pan, and stir until the cheese starts to melt.
- Pour in the reserved pasta water to create a creamy sauce. Season with dried oregano, dried basil, salt, and black pepper. Stir to combine.
- Add the cooked pasta to the pan, tossing until well coated in the flavorful Feta cheese sauce.
- Adjust seasoning if needed and cook for an additional 2-3 minutes to allow the flavours to meld.
- Serve hot, garnished with fresh basil leaves.
