500ml whole milk | |
150g granulated sugar | |
1 vanilla bean, split and seeds scraped | |
2 tablespoons cornstarch | |
100g Fior di Latte (fresh mozzarella cheese made from cow's milk), finely diced |
Method
- In a saucepan, combine 450ml of milk and the scraped vanilla bean seeds. Heat over medium heat until just simmering, then remove from heat and let it steep for 15 minutes.
- In a small bowl, whisk together the remaining 50ml of milk and cornstarch to create a smooth slurry.
- Return the vanilla-infused milk to the heat, add sugar, and bring it to a gentle boil. Slowly whisk in the cornstarch slurry, stirring constantly until thickened (about 2-3 minutes).
- Remove from heat and let the mixture cool to room temperature. Then, cover and refrigerate for at least 2 hours.
- Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions.
- In the last few minutes of churning, add the diced Fior di Latte to evenly distribute throughout.
- Transfer the gelato to a lidded container and freeze for at least 4 hours or until firm.
- Scoop into bowls or cones, savour the creamy goodness, and indulge in the Fior di Latte experience!
