Ingredients

500g yellow onions, thinly sliced
2 tablespoons unsalted butter
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon sugar
2 tablespoons all-purpose flour
4 cups beef broth (or chicken broth, or vegetable stock)
100g Gouda cheese
1⁄2 cup dry wine (optional)
Baguette slices for topping
Salt and pepper to taste

Method

  1. In a large pot, melt butter and olive oil over medium heat.
  2. Add sliced onions, minced garlic, and sugar. Cook until caramelized, about 20-25 minutes.
  3. Stir in flour and cook for an additional 2-3 minutes.
  4. Pour in broth or stock and wine, if using, stirring well. Bring to a simmer.
  5. Season with salt and pepper, then let it simmer for 20 minutes.
  6. Preheat the broiler.
  7. Ladle the soup into oven-safe bowls, top with baguette slices, and sprinkle Gouda cheese over each.
  8. Place under the broiler until the cheese is melted and golden.
  9. Serve hot and enjoy!
