Ingredients
2 boneless, skinless chicken breasts | |
4 slices Pepper Jack cheese | |
1 red bell pepper, thinly sliced | |
1 red onion, thinly sliced | |
2 tablespoons olive oil | |
Salt and pepper, to taste | |
For the sauce | |
1⁄2 cup mayonnaise | |
1 tablespoon chipotle in adobo sauce, minced | |
1 teaspoon lime juice |
Method
- Preheat your grill or grill pan to medium-high heat (about 200°C/400°F).
- Season chicken breasts with salt and pepper, drizzle with olive oil, and grill for 6-8 minutes per side until fully cooked.
- In the last 2 minutes of grilling, place a slice of Pepper Jack cheese on each chicken breast, allowing it to melt.
- While the chicken is grilling, mix mayonnaise, minced chipotle, and lime juice in a small bowl to create the chipotle mayo.
- Toast the burger buns on the grill for 1-2 minutes until golden brown.
- Assemble the sandwiches by placing the cheesy chicken on the bottom bun, topping it with red bell pepper, red onion, and a generous dollop of chipotle mayo.
