Ingredients

150g kale, stems removed and leaves torn
1 apple, thinly sliced
50g pecorino cheese, shaved
1 medium size chopped tomato (optional)
50g mixed nuts (walnuts, almonds, or pecans), toasted
2 tablespoons olive oil
1 teaspoon balsamic vinegar
1 teaspoon Dijon mustard
Salt and peper, to taste

Method
