Ingredients

500g ground beef
1 1⁄2 cup breadcrumbs
1 1⁄4 cup milk
1 egg
1 onion, finely chopped
1 clove garlic, minced
1 teaspoon Worcestershire sauce
1 teaspoon dried oregano
100g Pepper Jack cheese, cubed
Salt and ground black pepper, to taste
2 tablespoons ketchup
1 tablespoon brown sugar
1 teaspoon Dijon mustard or white vinegar

For the glaze

2 tablespoons ketchup
1 tablespoons brown sugar
1 teaspoon Dijon mustard or white vinegar
Salt and ground black pepper, to taste

Method

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, Worcestershire sauce, oregano, salt, and pepper.
  3. Mix the ingredients until well combined, but avoid overmixing to keep the meatloaf tender.
  4. Place half of the meat mixture into a greased loaf pan, then evenly distribute the cubed Pepper Jack cheese over the meat.
  5. Cover the cheese with the remaining meat mixture, shaping it into a loaf form.
  6. In a small bowl, mix ketchup, brown sugar, and Dijon mustard to create the glaze. Spread it over the meatloaf.
  7. Bake for 45 minutes or until the internal temperature reaches 75°C (165°F).
  8. Let it rest for a few minutes before slicing.
  9. Serve slices with your favourite sides and enjoy the cheesy goodness!
