Valentine's Homemade Goat Cheese Chocolate Gifts
Making small chocolate boxes with black chocolate is not as difficult as you may think, though it requires some time to prepare. Remember that perfection is not what matters, but the love you put into it and the pleasure of offering a unique gift on a special date.
- You can prepare the chocolate boxes one or two days in advance and keep them in the fridge. In this case, you should take them out one hour before being served.
- Add honey or maple syrup to the cheese cream to give it a little sweetness and flavor.
- Mix in a pinch of salt, if desired.

Method
You'll need the following equipment:
- Double boiler or microwave for melting chocolate
- Pastry brush or small paintbrush
- Refrigerator or cool space for setting the chocolate
- Mold for the boxes (you can use silicone chocolate molds or even create your own by molding them into a simple box shape with aluminum foil or plastic wrap)
- Parchment paper
- Aluminum foil or plastic wrap
Prepare the Molds
- If you’re using a silicone mold, make sure it's clean and dry.
- If you're using something homemade, create a mold by shaping the box form with aluminum foil or wrapping plastic wrap around an object like a small container.
2. Melt the Chocolate
- Break the dark chocolate into pieces and place them in a heatproof bowl. Add the oil or butter.
- Using a double boiler: Fill a pot with water and heat it to a gentle simmer. Place the bowl with chocolate over the pot, ensuring the water doesn't touch the bowl. Stir until the chocolate is fully melted.
- Using a microwave: Heat the chocolate in 20-30-second intervals, stirring in between until it's fully melted and smooth.
3. Coat the Molds
- To make hollow chocolate boxes, coat the inside of your mold with melted chocolate using a pastry brush or a small paintbrush.
- Apply a thin, even coat, and let it set for about 10 minutes in the fridge or until firm.
- Once the first layer has set, apply a second layer of chocolate to thicken the box's walls.
- Let this layer set completely in the fridge for about 20 minutes.
4. Remove the Chocolate Boxes from the Mold
- Once the chocolate is completely set, gently pop the chocolate boxes out of the mold.
- If you’re using a silicone mold, this should be easy. For makeshift molds, carefully peel away the aluminum foil or plastic wrap.
5. Fill Your Boxes
- In a small mixing bowl, soften the goat cheese by stirring it with a spoon or whisk. You want it to be smooth and creamy.
- Fill half of the box with the cheese cream.
- Put a blueberry in the center
- Cover with more cheese
- Remove the skin from the pistachios and chop them finely, then sprinkle on top of the cheese.
- Finalize with a raspberry on top
6. Set the Boxes
- Once filled, place the chocolate boxes in the fridge for about 10-15 minutes to make sure everything stays firm. Or leave them longer but remember to remove them from the fridge one hour before serving.
