It is made into large wheels that are wrapped in wax, and aged by the affineur Betty Koster at Fromagerie L’Amuse for six months. This Gouda offers the creamy, earthy qualities of a hard goat cheese, combined with the rich, slightly sweet caramel finish of a Gouda.
