Nevat cheese is produced in the Barcelona region of Spain. It is the white mold ripened cheese made by Mr. Joseph Cuixart. Pasteurised goat’s milk is used while making this cheese. The aging period is about 60-90 days. It has beautiful white rind with semi-soft texture. It is hand made cheese. It is made with the help of cheesecloth. The rounded square with turned up point is the symbol’s “snowed” in Catalian.
