Cornish Kern

Cornish Kern is a handmade hard cheese made by Michael and Margaret Horrell of Lynher Dairies Cheese Co., Cornwall, England from the pasteurised milk of Pengreep herd. The name 'kern' (Cornish for 'round') aptly describes the well-rounded flavour profile of the cheese. Kern packs a punch of flavours ranging from rich, nutty to savory and smooth. However, it is every easy to eat and extremely pleasant to taste.

The cheese is a modification of a Dutch recipe, which requires that the curds are washed with water part way through the cheese making process. This results in a close textured cheese with a slight hint of caramelisation and covered in a breathable black wax type rind.

This cheese has won gold award at the 2014 World Cheese Awards.
