Innes Brick is an artisanal unpasteurized goat's milk cheese handcrafted by Joe Bennett at Staffordshire using time-honoured traditional craft methods.

Made using animal rennet, Innes Brick is a pale yellow cheese having a smooth and light texture with a silky breakdown and delicate rind. The flavours of the cheese are delicate and acidic when young. It develops sweet notes of hazelnut when fully matured.
