Island Bries is a soft bloomy rind cheese with a light golden creamy texture and some small "eyes" holes. It has a velvety white rind with scents of fresh grass complemented by earthy, mushroom overtones. The aromatics of the cheese work wonderfully with crackers and fruit as well as baked with nuts and brown sugar and rum on top.
