Cap Cressy is a smear ripened goat cheese from the Lombardy region of Italy, imported and sold by Fifth Town Artisan Cheese. When young, the cheese has a typical lactic goat flavour, which mellows with aging and the sweet savoury flavour takes over.  Pair Cap Cressy with a county Pinot Noir.
