Mature Wensleydale (or Extra Mature Wensleydale or Hawes’ Yorkshire Wensleydale Special Reserve PGI) is aged for up to nine months to produce a firm yet crumbly cheese. It is coated in green wax and has a fresh, citrusy flavor with hints of wild honey.
