Riseley is a washed-rind sheep’s milk cheese. It has a rich and smooth interior under a vivid, tacky rind that may have a salty crunch at times. The flavours of the cheese are strong and deeply savoury, with occasional notes of smoky bacon. The cheese is suitable for vegetarians.
