Calva d'Auge is an uncooked and unpressed soft cheese manufactured in Normandy region of northern France. Also known as "Camembert au Calvados", this Camembert cheese is made from cow's milk. Ripened over 60 days, a small amount of rind is delicately scraped off and the cheese is dipped in Calvados to settle it for 3 to 5 hours. Then it is covered in breadcrumbs and crushed French crackers. Those all processes allow the cheese to impregnate with Calvados, an alcohol drink made from apple. It offers an excellent taste and nutty, rich and intense flavour to the cheese. Try its sensational taste with a glass of white, Normandy cider or light red wine.
