Matocq is named after the person M. Matocq who created it for the first time. It is exported to Germany, Belgium, and the United States.
It is a round-shaped, semi-hard cheese made from cow or sheep's milk. Though its maturation period is of six to eight months, it can be extended to one year.
Matocq cheese has a nutty flavour with a healthy balance of acidity and salt. It usually served with wine.
