Pave de Moyaux
Pave de Moyaux is a piquant and slab-shaped cheese from Normandy with a long tradition. Made from cow’s milk, it is a farmhouse or dairy cheese with semi-soft texture and reddish rind. The maturation period is from two to three months and when aged, the taste becomes rather strong and developes the grassy aromas with the hint of mushrooms and wet cellers. The cheese has a mild and supple pate, with a relatively high fat content. Its smooth, silky texture with spicy tang is well worth trying with the wines like Champagne, Viognier or Sauvignon Blanc. This cheese is known by various names such as Pavé de Moyaux (Moyaux- name of a commune), Pave d'Auge (name of area in Normandy), Pavé du Plessis (Plessis: a name of a dairy) and Pave du Trouville (Trouville: a name of a small city). Pave is the name given to the square cobblestones that is still seen in old marketplaces in France.
