Quatre-Vents
The cheese's name means "four winds" and was chosen because of the location of the farm where it is made, which is on the top of the hill. It usually has a round shape and a natural white-rind. The cheese is made without chemical rennet from goat's milk that gives it a slightly sweetish character. The affinage takes about two to three weeks and the content of fat is 45 per cent.
