Asiago d’Allevo DOP
Asiago d'Allevo DOP is a cheese produced from thermalized cow's milk in the provinces of Vicenza, Trento, Padova and Treviso. Asiago d’Allevo and Asiago Pressato are the two main types of which d'Allevo is more traditional. The flavour of the cheese varies according to its age.
When it is sold as "Mezzano" (medium-aged) at the age of four to six months, the flavour is pleasant, yeasty with a compact texture. The flavour becomes more savoury after aged for 5 months.
