Mastorazio is an aged Pecorino made from sheep's milk by Casa Madaio at their production and aging facility in Salerno, Italy. 

The cheese has a natural brown rind and dense pale yellow paste. It is matured for 12 to 18 months at the aging caves situated at Castelcivita, in the heart of the The National Park of Cilento and Vallo of Diano. Mastorazio's has a very strong aroma of milk, dry hay and hazelnuts whilst the flavour is sharp with a touch of spice. The cheese pairs well with Taurasi wine, a local Campanian wine.
